Recipe for: Carrot Ginger Soup


2 large bunches of carrots chopped (about 10)

1 Tbsp fresh ginger grated

1 tsp fresh turmeric grated (If not available sub ½ tsp dry)

¼ tsp ground cumin

¼ tsp ground coriander

2-3 Tbsp coconut butter

4-6 cups filtered water


Place carrots in a large pot.

Add enough water so they are just covered and boil until almost tender.

Add coconut butter, and spice.

Cook a little more until carrots are completely tender.                                                  

Allow soup to cool some and then puree with an immersion blender or blender.

Add salt and pepper to taste and garnish with a little cilantro.
