Carrot Ginger Soup

2 Large bunches of carrots chopped (about 10)

1 Tbsp fresh ginger grated

1 tsp fresh turmeric grated (If not available sub ½ tsp dry)

1/4 tsp ground cumin

¼ tsp ground coriander

2-3 Tbsp coconut butter

4-6 Cups filtered water

Place carrots in a large pot
. Add enough water so they are just covered. Boil until carrots are almost tender
. Add coconut butter, and spice
5. Cook a little more until carrots are tender. Allow soup to cool some and then puree with an immersion blender or blender. Add salt and pepper to taste and garnish with a little cilantro.
